Bacon, bacon, bacon! Many agree that bacon is a food group all its own. In this class, Jules Carney of the Leaping Pig Charcuterie will teach you how to make this popular food staple at home with little to no special equipment needed. You’ll learn meat selection, preparation and different ways to cure and smoke bacon. Most think of pork belly when they think of bacon, but bacon can be made from any part of the pig, and in this class, you’ll learn how to make these different types: • Hot smoked bacon (from the belly) • Back bacon (from the loin) • Arkansas bacon (from the shoulder) At the end of the class, you’ll enjoy BLTs three ways and served with classic sides.
