Foodservice and Personnel Management helps students build practical skills in recipe standardization, food production, meal service, menu modification, and quality improvement to support safe, efficient foodservice operations. This is the first of two foodservice management courses in the Dietary Manager Training Program.
This course is one of three required courses for students completing ANFP Pathway I. It includes online coursework and requires supervised field experience.
Field Experience
Each student is responsible for identifying a non-commercial foodservice operation where the field experience will be completed, as well as a qualified preceptor to coordinate and supervise the experience. Students should confirm both their site and preceptor before registering for the course. For an additional fee, the program may provide an online preceptor to supervise the required experience.
